Best Lemon Squares Ever

Heat oven to 350.

Melt two sticks of butter and add to 2 C. of flour and 1/2 C. of powdered sugar. Lightly butter a 9” X 13” pan and pat dough into bottom. Bake for 20 min.

Beat together:
4 eggs 
4 T. of lemon juice until frothy. 

In another bowl, mix together:
 4 T. of flour
2 C. granulated sugar
1 tsp. of baking powder
1/2 tsp. salt. 

Add to the egg mixture until well mixed and pour over hot crust. Bake for 25 min. more. 

Sprinkle confectioners’ sugar over the top and cut into squares while hot.

The best way to cut them is the use the end of a metal spatula, press down, lift and keep going. It makes nice clean cuts.
